Like a lot of good recipes, this one was born out of necessity and experimentation. I woke up, looked in the fridge, and a few minutes later, I was eating this omelet:
Ingredients for 2 omelets:
-Butter
-One large zucchini chopped into small cubes
-4 eggs beaten
-3 slices of prosciutto sliced into fine strips
-1 clove of elephant garlic sliced as thinly as possible
-grated cheese and salt and pepper to taste (I used pepper jack, but mozzarella or colby would also be good)
Method:
Start by frying the zucchini in the butter over medium high heat until it has a nice brown skin on it.
Then add your elephant garlic and prosciutto and saute over medium heat for about 3 to 5 min.
Add salt and pepper to taste.
Set the filling aside and make the omelet.
Add some more butter to the skillet and pour two beaten eggs into the skillet once the butter is melted and bubbling.
Add your cheese and filling, give it a flip and viola! Breakfast is served!
